  • 100 ml of milk at room temperature;
  • 15 grams of melted butter;
  • 1 tablespoon of cachaça.

Preparation:

Begin by sifting the flour, adding the salt and sugar. Stir with a spoon to combine. Next, add the egg and melted butter, then the room temperature milk.

Stir with a spoon and gradually combine all the ingredients. Add the cachaça little at a time, also mixing. Once the ingredients are fully combined, it’s time to knead.

Do this until you have a smooth dough, with a texture that resists pressure with your finger and tends to return to its original state. Then, let it rest to relax the gluten. The dough should remain at room temperature for 30 minutes, covered with plastic wrap to prevent dehydration.

Once the resting time is over, just roll out, cut, fill, and fry! Easy peasy, right?

Pastry Dough Without Cachaza

Ingredients:

  • 3 cups of  wheat  flour ;
  • ¼ to ½ tablespoon of salt;
  • 170 grams of unsalted butter;
  • 1 egg;
  • 1/4 to 1/2 cup water or milk. Add as needed until the dough is smooth.

Preparation:

Mix the flour and salt in a food processor. Add the butter, egg, and water or milk (little by little). Pulse and mix until small, soft balls of dough begin to form.

Remove the dough from the food processor and form it into a single ball. If you don’t have a food processor, follow the same instructions to make it by hand. There’s no difference. Mix well until all the ingredients are well incorporated and a smooth dough is obtained. You can add more water or milk if the dough becomes dry.

Separate the ball into two or three pieces, flattening them into a disc shape. The dough can be used immediately or stored refrigerated for 1 to 2 days.

Roll out the pastry with a rolling pin until you have a thin layer and cut the pastries into the desired size. You can use round pastry cases, a small plate, or a cup.

Another option is to form several medium-sized balls (or small ones, depending on the size of the cakes you want to make). Then, roll out each ball individually to  make a  very thin and crispy pastry .

Ingredients:

  • 1 Cabbage;
  • 3 eggs;
  • 50 grams of melted butter;
  • ½ teaspoon of salt.

Preparation:

Cut the cabbage into small pieces. Place the boiling water in a pot with salt. When it boils, add the cabbage, turn off the heat, and let it simmer for 5 to 10 minutes.

Cook the eggs until hard-boiled. Pass them through the cabbage, pat dry, and mix with the crushed boiled eggs, adding the butter.
